1984년 인하 대학교 후문에서 처음 소개된 계란빵은 달콤함과 고소함이 어우러져 30년 가까이 주머니가 가벼운 학생들과 일반인들에게 지속적인 인기를 끌고 있다. 계란 한 개가 고스란히 들어가며 각종 첨가물이 가세하여 한 끼의 식사 대용으로도 훌륭하다.

1920년대 내내 조선에 들어오는 중국인의 수는 계속 늘었고 한국에 정착해 있던 화교들은 새로 한국에 들어오는 중국인들을 위한 값싼 음식이 필요했다. 이때 값이 싸고 쉽게 상하지도 않아 팔기에 가장 좋은 음식은 호떡이었다. 그 당시의 호떡은 종류가 다양했는데 한국인들이 호떡 하면 바로 연상하는 당화소, 지금은 계란빵으로 알려진 계단병 등이 있었다. 지금의 계란빵은 19세기 말 일본에서 만들어져 1930년대에 들어 온 붕어빵의 전신인 도미빵과 그 맥락을 같이 한다.

인하 대학교 후문의 계란빵은 배고픈 학생들을 위하여 또 다른 형태의 식사 대용품으로 탄생하였다. 1984년 11월 처음 문을 열어 100원부터 시작했던 계란빵은 2012년 개당 500원에 판매 하였었다. 파는 곳마다 다르지만 1,000원에서~3,000원사이에 판매되고 있는 것같다. 계란빵은 인천의 독특한 먹을거리에서 더 나아가 전국적인 즉석 음식으로 자리하고 있다

만드는 법
계란빵을 만들기 위해서는 밀가루를 주원료로 하는 노란 반죽을 빵틀에 넣고 계란을 한 알 깨뜨려 넣은 후, 그 위에 다시 반죽을 올려서 돌려 굽는다. 완성된 계란빵을 잘라 보면 계란 한 개가 부서지지 않고 고스란히 익어 있다.






생활 민속적 관련 사항
계란빵은 1980년대 먹을거리가 다양하지 않고 특히 돈이 없는 대학생들에게 훌륭한 간식거리였고 식사 대용이었다. 계란방은 거의 30년 동안 변함없는 사랑을 받으면서 인하 대학교 학생에게는 하나의 문화 콘텐츠로 자리 잡았으며, 추억의 맛으로 기억되고 있다.
